About the Webinar
Dr. Kolasa will introduce us to Sandy, a patient from the ECU Family Medicine clinic who is complaining of memory loss. She will discuss how a patient with B12 deficiency and/or of food insecurity can present with symptoms of dementia. She will demonstrate how to in a clinic setting assess Sandy’s food security as well as her B12 adequacy. She will describe the MIND approach to eating and how to assess adherence. She will then challenge participants to do one of the following:
- 1) create a 7-day meal plan that meets the MIND criteria within a specific calorie range (it can be challenging at 1,000 and 1,200 calories);
- 2) design a two-page handout that has the MIND diet depicted on a plate (a sample of the diabetic plate and the keto plate from Vidant Health will be provided);
- 3) prepare a 600-700 word newspaper column/blog about the MIND diet; video self-assessing a patient’s food security status and counseling on MIND.
Dr. Kolasa will provide a critique for up to 50 interns or others who need to complete an activity for credit.
About the Presenters
Kathryn M Kolasa PhD, RDN, LDN; Professor Emeritus, Brody School of Medicine
Dr. Kolasa earned her Ph.D. in Food Science from the University of Tennessee, Knoxville in 1974. She has served on the faculties of the University of Tennessee, Knoxville, Michigan State University, and East Carolina University. She served as SNEB President in 1984-85 and received the Career Achievement Award 1995. Dr. Kolasa has authored over 225 publications, a textbook, book chapters, curriculum guides, bulletins and training manuals, videotapes and CD-ROMS and has delivered more than 400 professional presentations. She has been writing a weekly nutrition column for the Daily Reflector, Greenville, NC since 1986. She loves to snorkel and scuba dive, walk the beach and golf.
